Ok, so we were not actually in Cuba but our kitchen sure was convincing! Matt and I bought some plantains a few weeks ago with the intent of frying them up in coconut oil (sounds good right!?), so we decided to build a whole meal around it. Matt was in charge of the black beans and pork while I tackled the plantains and coconut rice. What a meal we built! Slow cooked Cuban black beans, slow roasted, braised pork chops, steaming coconut rice all topped off with fresh cilantro and golden fried plantains! Yum! Not bad for a Wednesday night dinner.
