Royal icing for the gingerbread house gave us 7 leftover egg yolks, so Matt wanted to make brioche. We decided that Sunday was to be our baking day, so we assembled a list of recipes that we wanted to make.

- Eggplant Parmesan
Saturday we took a trip to the grocery store to stock up on flour and food for the week. We repeated this trip on Sunday since we forgot parchment paper.
Sunday was baking day. Matt and I tore through the kitchen one recipe after another, the oven going all day. The brioche was the first thing to get made, then left to raise on the mantle above the space heater. I mixed up cranberry cashew biscotti and started the oven. Peanut butter kiss cookies went in the oven as we sweated eggplant and stirred homemade sauce on the stove. Cookies done, we popped in the breaded eggplant to test out the baking method (instead of frying). It worked great! Never going back to fried again! With the eggplant golden brown and crispy, we layered it between sauce and cheese and put the heaping pan into the oven. 25 minutes later we were eating dinner on the couch while watching The Holiday next to our Christmas tree. Warm house, good smells, fun day spent just the two of us. A perfect baking Sunday.
