Burned Beans

Last night dinner was great, but not quite what we had pictured. We were going to make red beans and rice with chorizo, but the beans literally went up in flames when we ignored them on the stove for too long (ok, not really flames but we did fill Matt’s apartment with smoke. Thank goodness the windows open!). Ok, so much for that meal idea. We went for the backup plan of frozen enchiladas that were leftover from a really good batch we made last month. We stuck them in the oven while Matt whipped up a batch of bread, and then feasted on enchiladas and salad with truffle oil dressing. Yummy! We polished off the birthday cake for dessert.

Tonight we are having our good standby dinner, aglio e olio, amazingly fast and so good. It is basically olive oil, garlic and anchovies cooked together and then mixed with spaghetti. So good. I am looking forward to going home and having dinner with my sweetie!
